Meatless Monday recipe of the week: Chipotle Black Bean Grilled Quesadilla

Happy Meatless Monday folks! How was the lasagna recipe we shared last week? Good?

Well, this week we’re sticking with the easy-as-pie theme for those of you new to going meatless. This time we’ve got an easy quesadilla that would be dynamite with some corn or maybe a taco salad. And don’t forget, KU is taking on Valparaiso at 7 tonight, so consider adding some corn chips and dip and making this a great game night meal.

Chipotle Black Bean Grilled Quesadilla

3/4 pound black beans — cooked; half mashed - half whole

2 chipotle chiles in adobo — minced

1 1/2 cups mayonnaise

Chipotle adobo sauce only (from the can), to taste

12 large tortillas

Mixture of mozzarella and cheddar flavor cheese or soy cheese

Heat your grill or grill pan. In a bowl, mix the beans and chipotle chiles together. In another bowl, mix the mayonnaise and chipotle sauce together. Spread the mayo mixture over one half of a tortilla. Top with the cheese and the beans. Fold over the tortilla. Carefully transfer to grill and cook until crisp and the cheese is melted. Serve immediately.
