About this place

Fitting in nicely with downtown's new emphasis on "green," Ingredient focuses on build-your-own salads and pizzas. Predetermined options and grilled sandwiches are also available for the less imaginative. Everything, however, is made fast and fresh. The affordable menu is certainly vegetarian-friendly but carnivores are well served with items like the sausage grinder. Atmosphere is clean, casual and spacious with plenty of seating. Bonus: Wall-to-wall windows make Ingredient a great people-watching spot on the bustling corner of 10th and Mass.

Dear Owners of Ingredient,You have a really good thing going over there. But here's a piece of advice, don't open the second part of your venture (iBar) without being ready. A friend and I waited for 15 minutes with a steadily growing line of people at the counter there, as wait staff whizzed by without acknowledging us. After finally fetching someone, we were told (while being rung up) that no, there is no espresso machine...and from the looks of things, nothing else except a paltry sampling of sweets. It seems half the menu, which was already on display, complete with pencils for ordering, was not available. So, if you're going to open without full service, please inform your customers before they've waited around for some service. A handwritten note would have done the trick...and maybe an apology would have been nice.Other than that, Ingredient is still one of my favorites in Larryville.

First off, let me say that my salad was wonderful. Fresh ingredients with a great dressing. Very tasty stuff.

HOWEVER- I'm guessing it would have tasted better with ALL the ingredients I ordered, as would my friend's salad have tasted better with all the ingredients she'd ordered.

Plus, it took forever to get our food, the restaurant was loud and I'm not sure the very nice young lady at the register was quite ready to handle a lunch rush.

When a salad and a soda cost over $10, I expect a little more.

Steadily getting better -- now they have the vegan pizza crust, plus more veggie options, like the Philly Tofu Wrap. Yummo.

Oh yeah, and their unfortunately named "warm indian brick bread", which is served with almost everything by default, seems to be somewhere between naan and poori. I have heard that it is good.

They offered ciabatta as a vegan/kosher substitute for it, as it is made with milk.

Having been there and discussed the vegan options of the menu at length, I think 12 vegan dishes is an error (unless it counts every make-your-own salad option), but they did assure me that they were developing a vegan pizza crust and perhaps a couple of other new items that were more vegan-friendly than the current menu.

Their dishes are designed to have a perfect melding of intense, simple flavors, so removing part of a menu item to make it animal-free takes too much from the overall character of the dish.

Definitely worth trying, whether you go now or wait for any menu tweaking. They are obsessed with quality, and the ingredients are in fact superb.

(Oh, and they recycle -- always a plus in my book!)
